This is a great weeknight meal because it comes together really quickly and it's super healthy.
Speaker A
So let's get started.
Speaker A
First, you're going to want to cut your chicken into bite-sized pieces.
Speaker A
I'm using about a pound of boneless, skinless chicken breast here, but you could also use chicken thighs if you prefer.
Speaker A
Once your chicken is cut, you're going to want to season it with a little bit of salt and pepper.
Speaker A
And then we're going to set that aside while we prepare our vegetables.
Speaker A
For the vegetables, I'm using about two cups of broccoli florets, one red bell pepper, and one small onion.
Speaker A
You can use any vegetables you like, but I think this combination works really well with the chicken.
Speaker A
So once your vegetables are chopped, we're going to heat up a large skillet or wok over medium-high heat.
Speaker A
Add a tablespoon of oil and then add your chicken.
Speaker A
Cook the chicken for about 5 to 7 minutes, or until it's cooked through and lightly browned.
Speaker A
Once the chicken is cooked, remove it from the skillet and set it aside.
Speaker A
In the same skillet, add another tablespoon of oil and then add your broccoli.
Speaker A
Cook the broccoli for about 3 to 5 minutes, or until it's tender-crisp.
Speaker A
Then add your bell pepper and onion and cook for another 2 to 3 minutes, or until they're slightly softened.
Speaker A
Now it's time to add our sauce.
Speaker A
For the sauce, you're going to need a quarter cup of soy sauce, two tablespoons of rice vinegar, one tablespoon of honey, one tablespoon of cornstarch, and a teaspoon of ginger.
Speaker A
Whisk all of those ingredients together in a small bowl until everything is well combined.
Speaker A
Once your vegetables are cooked, add the chicken back to the skillet.
Speaker A
Pour the sauce over the chicken and vegetables and stir to combine.
Speaker A
Cook for another 2 to 3 minutes, or until the sauce has thickened.
Speaker A
And that's it.
Speaker A
Your delicious chicken and broccoli stir fry is ready to serve.
Speaker A
I like to serve this over rice or noodles, but you could also eat it on its own.
Speaker A
It's a really versatile meal and it's perfect for a quick and healthy dinner.
Speaker A
Enjoy!
